Apple Cider Beef Stew

Ingredients:

  • 2 pounds beef stew meat

  • 1 1/2 teaspoon salt

  • 1/2 teaspoon fresh ground pepper

  • 2 Tablespoons tallow (lard, olive or avocado oil are okay)

  • 1 large yellow onion, chopped into big chunks

  • 1 Tablespoon apple cider vinegar

  • 2 Tablespoons arrowroot powder

  • 2 cups apple cider juice

  • 2 cups beef broth

  • 1/2 teaspoon dried thyme

  • 1 bay leaf

  • 3 large potatoes or turnips, chopped

  • 4 medium carrots, chopped

  • 3 celery ribs, chopped

  • Fresh thyme for garnish

Instructions:

  1. Pat the beef dry with paper towels. Season with salt and pepper.

  2. In a large stock pot or dutch oven, heat oil over medium-high heat. Working in batches, brown the meat on all sides until golden, 2-3 minutes per side. Remove to a plate.

  3. Place the onion and vinegar in the pot, scraping the brown bits off the bottom of the pan. Cook for 3-4 minutes until onion is softened. Return the beef to the pan, sprinkle with arrowroot powder, coating the beef and onions until dissolved.

  4. Add the potatoes, carrots, celery, cider, broth, thyme and bay leaf. Bring to a boil then reduce heat and simmer for one hour, covered.

  5. Remove the bay leaf and garnish with fresh thyme. Enjoy!
